Instructions:
- Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Mix wet ingredients: In another bowl, whisk together buttermilk, eggs, melted butter, and vanilla.
- Combine: Pour wet ingredients into dry ingredients. Gently fold together until just combined. Some lumps are okay—don’t overmix!
- Rest batter: Let batter rest for 5 minutes. It will thicken slightly.
- Heat griddle: Preheat a griddle or large non-stick skillet over medium heat. Brush lightly with butter.
- Cook pancakes: Pour 1/4 cup batter for each pancake. Cook until bubbles form on the surface and edges look set (about 2-3 minutes). Flip and cook another 1-2 minutes until golden brown.
- Keep warm: Transfer cooked pancakes to a baking sheet in a 200°F (95°C) oven while cooking remaining batches.
