
Ingredients:
For the Fajitas:
1 lb chicken breast (sliced into strips)
2 bell peppers (red, yellow, or orange – sliced)
1 large onion (sliced)
2 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon paprika (smoked is amazing!)
1 teaspoon garlic powder
1/2 teaspoon oregano
Salt and pepper to taste
Juice of 1 lime
For Serving (Build Your Bowl):
Rice or cauliflower rice
Black beans (canned, drained)
Corn (fresh or frozen)
Avocado (sliced or guacamole)
Salsa or pico de gallo
Sour cream or Greek yogurt
Shredded cheese (cheddar or Mexican blend)
Fresh cilantro
Lime wedges
Tortillas (optional)
👨🍳 Instructions:
Step 1: Prep Everything (5 minutes)
Slice chicken into strips (about 1-inch wide)
Slice peppers and onions into strips
Place everything in a large bowl
Step 2: Season (2 minutes)
Add olive oil, all spices, and lime juice to the bowl
Toss until chicken and veggies are evenly coated
The mixture should be colorful and smell AMAZING
Step 3: Air Fry (15 minutes)
Preheat air fryer to 400°F (200°C)
Add seasoned chicken and veggies to the air fryer basket
Don’t overcrowd – work in batches if needed
Air fry for 12-15 minutes, shaking the basket halfway through
Chicken should be cooked through (165°F internal temp)
Veggies should be charred and tender
Step 4: Build Your Bowl (3 minutes)
Start with rice or cauliflower rice base
Top with air fryer chicken and peppers
Add black beans, corn
Layer on avocado, salsa, and sour cream
Sprinkle cheese and cilantro
Squeeze lime over everything
