
Cheesecake – Silky smooth perfection!

Ingredients:
For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/4 cup granulated sugar
- Pinch of salt
For the Filling:
- 32 oz (4 packages) cream cheese, room temperature
- 1 1/4 cups granulated sugar
- 3 tablespoons all-purpose flour
- 1 tablespoon vanilla extract
- 1 teaspoon lemon zest
- 4 large eggs, room temperature
- 2/3 cup sour cream
- 1/3 cup heavy cream
For the Topping:
- Fresh strawberries and blueberries
- Berry compote or jam
- Whipped cream (optional)
Instructions:
- Prepare pan: Preheat oven to 325°F (165°C). Wrap the outside of the 9-inch springform pan with aluminium foil (prevents water bath leaks).
- Make crust: Mix graham cracker crumbs, melted butter, sugar, and salt. Press firmly into the bottom of the pan. Bake for 10 minutes. Cool.
- Make filling: Beat cream cheese until smooth and fluffy (3 minutes). Add sugar and flour, beat until combined. Add vanilla and lemon zest. Add eggs one at a time, beating on low speed after each. Mix in sour cream and heavy cream until just combined. Don’t overmix!
- Bake in a water bath: Pour filling over crust. Place the springform pan in a larger roasting pan. Pour hot water into the roasting pan until it comes halfway up the sides of the springform pan. Bake for 55-65 minutes. The center should still jiggle slightly.
- Cool gradually: Turn off oven, crack door open, and let cheesecake sit in oven for 1 hour. Remove from oven and water bath. Cool to room temperature, then refrigerate for at least 4 hours (overnight is best).
- Serve: Run a knife around edges before releasing the springform. Top with fresh berries and berry compote.
