NEW YORK STYLE CHEESECAKE

Cheesecake – Silky smooth perfection!

⏱ Prep Time: 25 minutes | 👨‍🍳 Cook Time: 1 hour + 4 hours cooling | 🍽 Serves: 12

Ingredients:

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup granulated sugar
  • Pinch of salt

For the Filling:

  • 32 oz (4 packages) cream cheese, room temperature
  • 1 1/4 cups granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 tablespoon vanilla extract
  • 1 teaspoon lemon zest
  • 4 large eggs, room temperature
  • 2/3 cup sour cream
  • 1/3 cup heavy cream

For the Topping:

  • Fresh strawberries and blueberries
  • Berry compote or jam
  • Whipped cream (optional)

Instructions:

  1. Prepare pan: Preheat oven to 325°F (165°C). Wrap the outside of the 9-inch springform pan with aluminium foil (prevents water bath leaks).
  2. Make crust: Mix graham cracker crumbs, melted butter, sugar, and salt. Press firmly into the bottom of the pan. Bake for 10 minutes. Cool.
  3. Make filling: Beat cream cheese until smooth and fluffy (3 minutes). Add sugar and flour, beat until combined. Add vanilla and lemon zest. Add eggs one at a time, beating on low speed after each. Mix in sour cream and heavy cream until just combined. Don’t overmix!
  4. Bake in a water bath: Pour filling over crust. Place the springform pan in a larger roasting pan. Pour hot water into the roasting pan until it comes halfway up the sides of the springform pan. Bake for 55-65 minutes. The center should still jiggle slightly.
  5. Cool gradually: Turn off oven, crack door open, and let cheesecake sit in oven for 1 hour. Remove from oven and water bath. Cool to room temperature, then refrigerate for at least 4 hours (overnight is best).
  6. Serve: Run a knife around edges before releasing the springform. Top with fresh berries and berry compote.

Chef’s Tips:

  • All ingredients must be at room temperature for a smooth texture
  • Don’t overbeat after adding eggs—this causes cracks
  • Water bath ensures even, gentle baking
  • Cracks happen—cover them with toppings!
  • Chill overnight for the best texture and easier slicing

Why It’s Perfect:

New York cheesecake is dense, creamy, and luxurious. It’s the gold standard of cheesecakes—rich without being too sweet, with that signature tangy flavor.

Nutritional Highlights: Rich dessert, good source of calcium, perfect for special occasions
