Roast Chicken and Veggies for any Occasion

Ingredients:
For the Chicken:
- 1 whole chicken (4-5 lbs / 1.8-2.3 kg)
- 4 tablespoons butter, softened
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 lemon, halved
- 1 head of garlic, halved
- Fresh rosemary and thyme sprigs
For the Vegetables:
- 1 lb baby potatoes, halved
- 4 large carrots, cut into chunks
- 2 onions, quartered
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Prepare chicken: Remove chicken from refrigerator 30 minutes before cooking. Pat completely dry inside and out.
- Season: Mix softened butter with salt, pepper, garlic powder, paprika, and dried thyme. Rub all over chicken, including under the skin.
- Stuff cavity: Place lemon halves, garlic halves, and herb sprigs inside the cavity. Tie legs together with kitchen twine.
- Prepare vegetables: Toss potatoes, carrots, and onions with olive oil, salt, and pepper. Spread in a roasting pan.
- Place chicken: Set chicken breast-side up on top of vegetables. Drizzle with olive oil.
- Roast: Roast at 425°F (220°C) for 20 minutes. Reduce heat to 375°F (190°C) and continue roasting for 1 hour to 1 hour 10 minutes, until internal temperature reaches 165°F (74°C) at the thickest part of the thigh.
- Rest: Remove from oven and tent with foil. Let rest for 15 minutes before carving.
- Serve: Carve chicken and arrange on a platter with roasted vegetables. Drizzle with pan juices.
