Tacos Enchiladas Platter Platter Feast

A Mexican fiesta on one plate!

Ingredients:

For the Beef Tacos:

  • 1 lb (450g) ground beef
  • 1 packet taco seasoning (or homemade)
  • 8 hard taco shells
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Fresh cilantro

For the Cheese Enchiladas:

  • 8 corn tortillas
  • 3 cups shredded Mexican cheese blend
  • 1 can (19 oz) red enchilada sauce
  • 1/2 cup diced onions
  • 2 tablespoons vegetable oil

For Sides:

  • 1 cup salsa
  • 1 cup guacamole
  • 1 can refried beans
  • Lime wedges
  • Fresh cilantro

Homemade Taco Seasoning:

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon oregano
  • Salt and pepper to taste

Instructions:

For Tacos:

  1. Brown ground beef in a skillet, breaking into crumbles. Drain excess fat.
  2. Add taco seasoning and 1/2 cup water. Simmer 5 minutes until thickened.
  3. Fill taco shells with beef, lettuce, tomatoes, cheese, and sour cream.

For Enchiladas: 4. Preheat oven to 350°F (175°C). Spread 1/2 cup enchilada sauce in bottom of 9×13 baking dish. 5. Warm tortillas briefly to make them pliable. Fill each with cheese and onions, roll tightly. 6. Place seam-side down in baking dish. Pour remaining sauce over top. Sprinkle with more cheese. 7. Bake for 20-25 minutes until cheese is melted and bubbly.

To Serve: 8. Arrange tacos and enchiladas on a large platter. Serve with sides of salsa, guacamole, refried beans, lime wedges, and cilantro.
